Job description
Role Overview
The Pastry Chef Tournant is responsible for ensuring the efficient daily operation and management of the pastry shop, adhering strictly to company policies and maintaining high quality standards in pastry and dessert production and presentation.
Key Responsibilities
- Oversee the daily operation and control of the pastry shop and production area, guaranteeing smooth workflow.
- Ensure the consistent quality and attractive presentation of all pastry and dessert items served within daily menus.
- Support the Chef de Partie (CDP) Pastry in forecasting production needs and tracking leftovers for the purpose of minimizing waste and controlling food costs.
- Assist in setting up pastry displays for various buffet presentations.
- Apply thorough knowledge of United States Public Health (USPH) rules and regulations to maintain strict compliance each day.
- Maintain cleanliness of the pastry shop according to schedules set by the Executive Pastry Chef, using proper techniques to prevent equipment damage.
- Prepare the pastry galley for any scheduled or surprise USPH inspections conducted by ship management or inspectors.
- Manage requisition and transport of supplies from main stores to the pastry shop as assigned.
- Ensure recipes and portion yields align with company standards.
- Help the CDP Pastry complete daily reports on pastry consumption as requested by the Executive Chef.
- Stay informed of ship operational standards to effectively assist both guests and crew inquiries.
- Participate in meetings, training sessions, and other work-related activities as required.
- Perform any other duties assigned by supervisors or management relevant to the shipboard environment.
Qualifications and Education
- Minimum of three years experience as a Pastry Cook in upscale hotels, resorts, cruise ships, or convention banqueting services, with shipboard experience preferred.
- Knowledgeable in proper cleaning procedures, equipment care, and sanitation requirements.
- Completion of high school or equivalent education is required.
- Strong proficiency in English communication skills.
