Job description
Role Overview
As a Pastry Chef Tournant, you will oversee the daily operation and management of the Pastry Shop, ensuring the consistent production of high-quality pastries and desserts aligned with company standards. You will also contribute to minimizing waste by assisting with production forecasts and stock management, along with maintaining compliance with US Public Health regulations.
Key Responsibilities
- Manage and control the Pastry Shop's daily operations efficiently following company policies.
- Ensure the quality and presentation of pastries and desserts prepared for daily menus.
- Support the CDP Pastry in forecasting production needs and tracking leftover items to reduce food wastage and control costs.
- Help set up pastry displays across various buffets.
- Adhere strictly to the United States Public Health rules and regulations and ensure their daily enforcement.
- Maintain cleanliness of the Pastry Shop as per schedules determined by the Executive Pastry Chef, using proper techniques to protect equipment.
- Prepare the pastry area for announced or surprise USPH inspections by management or health inspectors.
- Manage requisition and transfer of required ingredients and supplies from main stores to the pastry shop when directed.
- Verify that recipes and production yields meet company standards.
- Assist the CDP Pastry in completing daily pastry consumption reports for the Executive Chef.
- Gain and apply knowledge of shipboard standard operations to effectively assist guests and crew with inquiries.
- Participate in meetings, training sessions, courses, and other relevant work activities as required.
- Perform any other duties assigned by supervisors or management related to this role.
Qualifications and Education
- At least three years of experience as a Pastry Cook in upscale hotels, resorts, cruise ships, or convention banquet services. Prior shipboard experience is preferred.
- Proficient in cleaning techniques, understanding requirements, and proper equipment usage.
- Completion of high school education or an equivalent basic educational qualification.
- Effective communication skills in English.
