Job description
Role Overview
The Pastry Chef Tournant will oversee the daily operations of the pastry shop, ensuring efficient production and control in line with company policies. This position is responsible for producing high-quality pastries and desserts as featured in daily menus.
Key Responsibilities
- Manage smooth functioning and control of the pastry shop daily according to company standards.
- Produce, ensure quality, and present pastry and dessert selections for daily menus.
- Support the CDP Pastry in forecasting production and tracking leftovers to minimize waste and maintain food costs within budget.
- Assist in setting up pastry displays at various buffet stations.
- Maintain full compliance with United States Public Health regulations and ensure the pastry shop adheres to these guidelines daily.
- Supervise cleaning of the pastry shop per schedules established by the Executive Pastry Chef and apply techniques to reduce equipment damage.
- Prepare the pastry galley for both scheduled and surprise USPH inspections by ship management or inspectors.
- Handle requisition and movement of required supplies from main stores to the pastry shop as tasked.
- Ensure recipes and portion yields meet company standards.
- Help the CDP Pastry with daily recap reports on pastry consumption as requested by the Executive Chef.
- Acquire knowledge of ship operations to assist guests and crew members effectively.
- Participate in meetings, trainings, courses, and other work-related events as required.
- Perform various related duties as assigned, including other job-related tasks directed by supervisors or management.
Qualifications and Education
- Minimum of three years of pastry cook experience in upscale hotels, resorts, cruise ships, or convention banqueting settings; shipboard experience is preferred.
- Knowledge of proper cleaning methods, equipment care, and hygiene standards.
- Completion of high school diploma or equivalent basic education.
- Proficient English communication skills.
Additional Information
This position requires adherence to USPH rules daily and readiness for inspections. The candidate will be expected to navigate the dynamic ship environment and participate actively in continual training and operational meetings. Flexibility to perform various related tasks outside explicitly listed duties is mandatory.
