Role Overview
The Baker Tournant plays a crucial role in ensuring the efficient operation and management of the Bakery Shop and daily bread production following company standards and policies. This position requires a thorough understanding of United States Public Health regulations and their strict implementation on a daily basis for maintaining hygiene and food safety standards.
Key Responsibilities
- Oversee the smooth execution and control of Bakery Shop operations and production on a daily basis in line with company guidelines.
- Manage production quality and the aesthetic presentation of a variety of bread products utilized in daily menus.
- Support the Head Baker in forecasting production needs and tracking leftover items to minimize waste and maintain cost control within budget limits.
- Assist in arranging and setting up bread displays across various buffet sections.
- Ensure the Bakery Shop is cleaned regularly as per the Executive Chef’s schedule, using proper procedures to prevent equipment damage.
- Maintain readiness for both scheduled and surprise inspections by USPH officials or ship management.
- Handle requisitioning and transport of materials from main stores to the bakery when required.
- Confirm that recipes and portion yields meet company standards.
- Help the CDP Baker prepare daily consumption reports as instructed by the Executive Chef.
- Acquire and maintain knowledge of ship operational standards to efficiently assist guests and crew with related inquiries.
- Participate in meetings, trainings, and courses important for job functions.
- Perform other duties as assigned by supervisors or management to support shipboard operations.
Qualifications and Education
- At least three years of Baker experience in upscale hotels, resorts, cruise ships, or convention banqueting service is required; cruise ship experience preferred.
- Knowledge of effective cleaning techniques and use of baking equipment is essential.
- Completion of high school or an equivalent basic education is mandatory.
