About the Hotel and Venue
Raffles Hotel Singapore stands as a carefully preserved 19th-century landmark, known for its grand colonial character, historic charm, and luxurious service culture. It brings together suites, restaurants, bars, and social spaces designed for guests who value heritage, elegance, and a distinctive Singapore experience.
1887 by André is the heritage dining venue within Raffles Hotel Singapore. Under chef André Chiang, the restaurant draws from Singapore’s culinary journey, blending Victorian-era influences with multicultural flavours and refined French techniques. Its beverage programme complements the food with classic and contemporary drinks, as well as non-alcoholic creations inspired by Nanyang flavours. Set within an intimate 42-seat space, the restaurant aims to create a dining experience that connects tradition with modern creativity.
Role Overview
The Mixologist plays a central role in shaping the personality and atmosphere of 1887 by André. This position supports the restaurant leadership team, takes charge of bar operations, and helps ensure that service quality consistently delivers an exceptional guest experience.
Core Duties
- Set a high standard of execution and take initiative to deliver more than what the role normally requires.
- Apply the hotel’s values in everyday work and decision-making.
- Anticipate and respond to the needs of internal and external guests with warm, genuine service.
- Support project planning by researching equipment, materials, supplies, and methods, as well as sourcing suppliers, reviewing contracts, and checking quality throughout implementation.
- Work collaboratively with colleagues across the hotel and build productive working relationships.
- Motivate, guide, and coach team members so they perform confidently and consistently.
- Communicate clearly in speaking, writing, and listening.
- Make sound operational decisions by defining objectives, collecting information, comparing options, and selecting the best course of action.
- Assist the management team in planning, prioritising, organising, and using resources effectively to meet business goals on time.
- Help prepare bar training materials and conduct service training with the Learning and Development Manager.
- Support opening preparations by reviewing simulation processes and updating evaluation criteria.
Operations and Standards
- Help maintain consistent quality in beverages and hospitality across the outlet.
- Deliver premium cocktails, coffee, tea, and other non-alcoholic beverages.
- Maintain the correct operating par stock for OS&E and beverage inventory.
- Follow all bar SOPs and recipe specifications maintained in FutureLog by the management team.
- Coordinate weekly equipment checks with Engineering and Housekeeping teams.
- Ensure the bar, outlet, and associated areas meet HACCP hygiene and cleanliness standards.
- Keep the bar and surrounding spaces clean, organised, and presentable at all times, taking immediate corrective action when needed.
- Support the outlet’s food and beverage training platform for all bar colleagues.
- Assist with public relations, media, and industry outreach for beverage programmes at Raffles Hotel Singapore.
- Use hotel systems and software confidently, including Micros, Sevenrooms, FutureLog, and related tools.
- Remain visible in the bar during key service periods.
- Meet or exceed outlet sales and performance targets.
- Maintain professional behaviour and strong work ethics at all times.
Guest Experience
- Promote sales through direct guest interaction.
- Actively gather guest feedback during service and use it to improve satisfaction and build repeat business.
- Handle complaints and comments promptly and effectively.
- Support the management team and bar staff in meeting MOQ, Forbes, and LQA service standards.
- Build strong relationships with local guests and help create a loyal customer base.
- Protect guest, colleague, and operator confidentiality and discretion at all times.
Leadership and Team Management
- Act as a role model for the bar team and support the restaurant management team.
- Provide colleague support and guest service during major meal periods.
- Help the team maintain strong and consistent service standards.
- Encourage teamwork and shared ownership of goals.
- Show cultural awareness and empathy in working with all team members.
- Uphold disciplinary standards and ensure team members understand expectations.
- Drive motivation and team bonding activities.
- Monitor grooming, punctuality, and individual performance.
- Support guest and colleague safety and security.
- Assist with recruitment, onboarding, and training of capable and confident team members.
- Ensure grooming and hygiene practices meet Raffles Hotel Singapore and National Environmental Agency / Singapore Food Agency requirements.
- Attend daily, departmental, and other relevant meetings, share important updates, and follow through on assigned projects.
- Check opening and closing procedures each day.
Commercial and Revenue Support
- Respond confidently to questions and feedback about the hotel and the outlet.
- Recommend revenue opportunities such as promotions and similar initiatives.
- Help control costs, expenses, and labour through practical management measures.
- Ensure all reports are accurate before submission.
Training and Development
- Organise training sessions according to established requirements and coordinate all related arrangements.
- Conduct regular on-the-job training to strengthen colleagues’ skills and knowledge.
- Record and submit monthly OJT hours to the Food & Beverage Office by the 15th of each month.
- Support orientation for new hires.
- Ensure colleagues understand hotel policies and regulations.
- Train colleagues on fire safety, emergency response, and hygiene requirements.
Additional Duties
- Carry out other responsibilities assigned by the Head of Department.
- Coordinate with the Culinary Team, Catering Sales Team, and Service Team to keep operations efficient.
- Use the Heartist approach by making guests and colleagues feel welcome, valued, and included.

Qualifications
- A bachelor’s degree in hospitality management is required.
- At least 10 years of experience in craft cocktail programmes is needed.
- Minimum 5 years of supervisory experience in a comparable role or establishment.
- Strong knowledge of classic and international cocktails, spirits, and hospitality service.
- Proficiency in Microsoft Office and basic POS systems.
- Relevant bar experience in a similar high-end setting.
- Solid understanding of alcoholic beverages and drink preparation.
- Valid Basic Food Hygiene Handler certification recognised by the National Environment Agency / Singapore Food Agency.
- Ability to learn new systems and programmes quickly.
- Good computer skills, including Microsoft Excel.
- Strong interpersonal skills and the ability to communicate with stakeholders at all levels.
- Service-focused mindset with attention to detail and enthusiasm for food and beverage innovation.
- Ability to work well across teams and departments.
- Good presentation and influencing abilities.
- Flexibility to adapt to change in a dynamic environment.
