Head Mixologist - Ras al Khaimah, UAE

Position Overview

We are looking for a skilled Head Mixologist to lead the beverage operations at Waldorf Astoria Ras Al Khaimah. This role involves overseeing beverage revenue, cost control, and maintaining the quality and standards of all bar offerings within the hotel.

Key Responsibilities

• Maximize beverage revenue across all outlets while ensuring costs remain within budgetary limits.
• Manage inventory and stock levels for all bars by closely monitoring beverage orders and par levels.
• Develop and update the wine list and cocktail menus in alignment with Waldorf Astoria standards and in consultation with the Director of Food & Beverage.
• Analyze sales data to ensure optimal stock rotation and maintain profitability targets.
• Compile detailed reports, statistics, and recommendations regarding beverage sales performance.
• Maintain Micros system data accuracy and complete any necessary documentation associated with it.
• Provide comprehensive training to all food and beverage staff on new and existing beverage products and sales techniques.
• Continuously review guest feedback and take corrective actions to enhance guest satisfaction related to beverage services.
• Monitor industry trends to identify and generate new business and promotional opportunities.
• Keep a close watch on competitor promotions and pricing to benchmark and remain competitive.
• Establish beverage costing and collaborate with cost control teams to ensure effective inventory management.
• Coordinate with the Chief Steward to manage monthly equipment inventories and handle breakage reports.
• Ensure efficient workflow and service sequencing during operational hours, providing hands-on support as needed.
• Assess training needs of team members and deliver appropriate development programs to build competence.
• Support marketing efforts to achieve promotional goals and maximize revenue generation.
• Foster a positive work environment by taking proactive interest in staff welfare, safety, and professional growth.
• Deliver friendly, professional service consistently to uphold brand standards.
• Prepare staff rosters, post them timely, and ensure accurate timesheet submissions.
• Ensure the availability of all necessary equipment and beverage stock to support smooth daily operations.
• Be adaptable to undertake additional operational duties as directed by the Food & Beverage department.
• Achieve maximum revenue and covers through effective promotional activities and upselling techniques.
• Compile and submit weekly, fortnightly, and monthly sales reports to senior management.

This role requires flexibility in extending job responsibilities as per operational needs. The position is based onsite at the hotel in Ras al-Khaimah, UAE.
