Job Summary
The Chef De Partie at BrookLodge & Macreddin Village is an important member of the kitchen team, responsible for supporting the smooth day-to-day operation of the kitchens while maintaining exceptional culinary standards and compliance with food hygiene requirements. The role calls for initiative, attention to detail, and a strong commitment to improving the guest dining experience.
Key Responsibilities
- Work alongside the Sous Chef and Head Chef to uphold excellent standards in purchasing, storing, preparing, and serving food.
- Follow all food hygiene, food safety, and HACCP rules without exception.
- Make sure ingredients and food items purchased meet the required quality expectations.
- Look for opportunities to enhance menu variety and food quality in collaboration with senior kitchen leadership.
- Keep dietary needs and special requests in mind so guest requirements are consistently met.
- Escalate defects or issues with kitchen equipment, fixtures, and fittings to the Sous Chef or Head Chef.
- Use kitchen equipment correctly and help ensure it remains in good working order.
- Prepare staff meals that are wholesome and well balanced, according to management direction.
- Support the hotel’s customer service standards by communicating effectively about services to guests when needed.
- Handle guest complaints by passing them promptly to the Sous Chef, Head Chef, or management.
- Take reasonable responsibility for personal and workplace health and safety by following all procedures and safety rules.
- Encourage positive teamwork within the kitchen and across other departments.
- Wear the required uniform and suitable footwear, and maintain high standards of personal grooming and cleanliness.
- Take on other duties within the scope of the role when directed by the Sous Chef or Head Chef.
- Attend training sessions and meetings as needed to build skills and keep knowledge current.
Qualifications and Experience
The ideal candidate should have prior experience in a comparable professional kitchen position. A culinary qualification or similar training is preferred. Good knowledge of food safety standards, along with strong communication and teamwork abilities, is important. The role also requires someone who can perform effectively in a busy environment and remain composed under pressure.
