Role Overview
Chedi Hospitality is seeking a Chef de Partie to take charge of a specific kitchen section in its Doha operation. The role focuses on preparing and presenting dishes to luxury-hotel standards, keeping quality consistent, and supporting smooth day-to-day kitchen performance.
What You’ll Do
- Prepare, cook, and plate menu items for the assigned section in line with approved recipes and hotel standards.
- Keep portion sizes, presentation, and food quality consistent across every service.
- Set up and maintain the mise en place needed for daily kitchen operations.
- Guide and coordinate Commis Chefs and Demi Chefs working in the section.
- Check freshness, storage, and overall quality of ingredients to meet food safety expectations.
- Reduce wastage, support stock rotation, and help control food costs.
- Keep the section clean, sanitized, and well organized at all times.
- Use kitchen equipment correctly, ensure it is looked after properly, and report any faults quickly.
- Assist the Sous Chef and Chef de Cuisine during service and step into other sections when needed.
- Support menu refinement, recipe consistency, and improvement initiatives when requested.
Guest Experience
- Contribute to memorable dining experiences by consistently delivering high-standard dishes.
- Handle dietary requests, allergies, and special instructions carefully and safely.
- Work closely with the Food & Beverage team to keep service timely and coordinated.
- Respond professionally to guest feedback and help implement corrective actions where necessary.
Cost Control & Administration
- Help manage costs by limiting waste and using ingredients, equipment, and resources efficiently.
- Assist with stock monitoring and inventory tasks as required.
- Follow hotel procedures for purchasing, receiving, and storing food.
Team Leadership
- Train, support, and coach junior kitchen team members to maintain culinary standards.
- Encourage collaboration and positive working relationships within the kitchen and with other departments.
- Ensure team members follow hotel policies, grooming expectations, hygiene rules, and food safety practices.
- Set the standard through professional conduct, accountability, and alignment with GHM values.
Health, Safety & Compliance
- Adhere to all hotel rules, procedures, and grooming standards.
- Maintain strong hygiene, sanitation, and occupational health and safety standards.
- Follow HACCP requirements, local food safety laws, and hotel-specific standards.
- Observe fire, emergency, and security procedures at all times.
- Perform additional reasonable duties assigned by the Executive Chef, Chef de Cuisine, or Sous Chef.
Qualifications
- A diploma or certification in Culinary Arts, Kitchen Production, or a similar field is preferred.
- At least 2 years of experience as a Chef de Partie, or 3 to 4 years as a Demi Chef de Partie or Commis Chef, preferably in a luxury hotel or high-end restaurant.
- Experience with an international luxury hospitality brand will be considered an advantage.
- Solid understanding of food preparation, kitchen operations, food safety, HACCP, and occupational health and safety.
- Strong organizational ability, communication skills, and leadership capability.
- Ability to stay effective under pressure while maintaining premium quality standards.
- Basic computer knowledge, including Microsoft Office and recipe management software, is beneficial.
