Commis (Akira Back)

Role overview

This full-time, non-management kitchen position is based at JW Marriott in Singapore. The role supports the culinary team at Akira Back with food preparation, cooking, quality control, and service coordination in a luxury hospitality environment.

Key duties

• Prepare specialty dishes and substitute items as needed.
• Control oven, broiler, grill, and roaster temperatures during service.
• Move frozen food into refrigeration for proper thawing.
• Plate food with correct portions, arrangement, and garnish presentation.
• Maintain food logs and track the quality and quantity of prepared items.
• Coordinate with the team during peak service periods and request support when required.
• Inform the chef about surplus ingredients that can be used in daily specials.
• Update service staff on specials and any menu items that are unavailable.
• Check that all food prepared and served meets quality standards.
• Cook and prepare dishes according to recipes, presentation requirements, quality standards, and kitchen checklists.
• Prepare cold food items as needed.

Team and compliance responsibilities

• Support managers with hiring, training, scheduling, evaluations, counseling, discipline, motivation, and coaching of team members.
• Act as a positive example for other employees.
• Follow company, food safety, and security procedures at all times.
• Report maintenance problems, accidents, injuries, and unsafe conditions to the supervisor.
• Complete required safety training and certifications.
• Maintain a neat, professional uniform and personal appearance.
• Protect confidential information and company assets.
• Respond to guest needs proactively and professionally.
• Communicate clearly and respectfully with colleagues and other departments.
• Build cooperative working relationships and help the team achieve shared goals.
• Listen carefully and respond appropriately to coworkers' concerns.
• Meet quality expectations and service standards consistently.
• Handle the physical demands of extended standing, sitting, walking, reaching, bending, twisting, pulling, stooping, and moving items up to 25 pounds without assistance.
• Carry out additional reasonable tasks assigned by supervisors.

Preferred education and experience

Applicants should have a technical, trade, or vocational school qualification and at least 3 years of relevant work experience.
