Role Overview
The Chef de Partie Pastry is responsible for overseeing the smooth operation of the pastry kitchen, ensuring pastry production aligns with the company standards and policies. This role requires leadership in supervising and evaluating the pastry team while maintaining quality and presentation of desserts.
Key Responsibilities
- Manage and control daily pastry kitchen operations in line with company regulations.
- Lead, train, and assess direct reports alongside the Assistant Pastry Chef.
- Ensure the quality, consistency, and presentation of pastry and dessert items for daily menus.
- Plan production forecasts, monitor leftovers to minimize waste, and maintain food costs within budget.
- Supervise the preparation and display of pastry and dessert buffets.
- Comply fully with United States Public Health rules and ensure daily adherence.
- Maintain the pastry shop’s cleanliness schedule as directed by the Executive Sous Chef Pastry & Bakery and ensure proper handling to avoid equipment damage.
- Prepare for announced or surprise USPH inspections, ensuring pantry readiness.
- Coordinate requisition and transport of supplies from main stores to the pastry galley.
- Adhere to company standards for recipes, master lists, and yield consistency.
- Support the Assistant Pastry Chef in documenting daily pastry consumption reports for the Executive Chef.
- Ensure team punctuality, proper uniform adherence, and personal hygiene compliance.
- Understand and manage Time and Attendance procedures, work schedules, contracts, and related documentation.
- Possess knowledge of ship operations to assist guests and crew effectively.
- Participate in all required meetings, training sessions, and workshops.
- Prepare daily production recaps and provide coaching and training to pastry cooks.
- Perform any other job-related duties assigned by supervisors or management as necessary.
Qualifications
- Minimum of two years' experience as a Pastry Chef de Partie in upscale hospitality environments such as hotels, resorts, cruise ships, or banqueting services, with preference given to shipboard experience.
- Degree from a recognized culinary school is mandatory.
- Demonstrated strong management skills within multicultural and dynamic settings.
- Excellent communication, problem-solving, decision-making, and interpersonal abilities.
- Proven customer service excellence, team-building capabilities, and conflict resolution expertise.
- Knowledge of personalized service principles, including needs assessment, quality standards, alternative delivery methods, and guest satisfaction evaluation.
- Advanced skills in planning, coaching, organizing, staffing, controlling, and evaluating.
- Intermediate proficiency in computer software is required.
