Overview

Key Responsibilities
- Ensure utmost hygiene and sanitation standards across all kitchen outlets per Health Department and Stewarding guidelines.
- Oversee ware washing and maintain cleanliness in food prep areas.
- Conduct routine equipment inspections and ensure proper maintenance and operability.
- Maintain inventory and adequate levels of chinaware, glassware, flatware, service wares, and specialized items; place replacement orders as necessary.
- Set par stock levels for dining and kitchen utensils and replenish according to requirements.
- Prepare weekly work schedules for stewarding team members, including part-time staff based on anticipated business volume.
- Authorize leaves, vacations (except own), overtime, and leave requests of team members.
- Schedule biannual inventories with Outlet Manager.
- Evaluate team members' performance, facilitate training programs, and handle disciplinary measures.
- Ensure all stewarding staff receive safety and sanitation training and promote cross-training among team.
- Guide and counsel team members on proper duty execution and career development.
- Coordinate regular performance reviews and prepare team members for advancement opportunities.
- Make recommendations on hiring, promotion, demotion, termination, and salary adjustments within authorized limits.
- Investigate service issues thoroughly to ensure continuous improvement.
- Control labor costs in alignment with budget.
- Maintain all records necessary for department efficiency and coordinate communications with other hotel departments.
- Build strong, collaborative relationships with staff to maximize their potential.
- Keep Food & Beverage and Culinary divisions informed on relevant matters and coordinate cross-departmental activities.
- Ensure all kitchen areas are immaculate, conducting daily walkthroughs with cleaning contractors prior to shift ends.
- Document and report incidents promptly to enable immediate corrective actions.
- Perform regular spot checks during operations and ensure buffet equipment is polished and dishwashing stations properly staffed.
Educational and Professional Qualifications
- Diploma or degree in hospitality management or related field is preferred.
Experience Requirements
- Minimum five years’ experience in stewarding or similar janitorial roles including at least one year in multi-unit operations and two years in supervisory capacity.
- At least two years’ experience with banquets covering all stages from setup to breakdown.
Additional Requirements
- Certification in sanitation management is required.
- Strong understanding of sanitation protocols and pest control measures.
- Knowledge of profit & loss statements and budget management.
- Demonstrated leadership abilities coupled with flexibility, patience, fairness, and firmness.
- Ability to work closely with management, independently, and efficiently in a fast-paced setting.
- Capability to calmly handle guest and team member conflicts and make reasoned decisions under pressure.
- Consistent work attendance and adherence to departmental and company policies are expected.
