Role Summary

As an Assistant Chief Steward, you will oversee hygiene and cleanliness in all kitchen and stewarding areas, ensuring compliance with standards and supporting the Stewarding Manager in managing costs, manpower, and equipment. The role demands leadership in daily inspections, coordination with engineering teams, training of staff, and preparation for events.

Key Responsibilities

• Oversee complete hygiene and cleanliness across all kitchens and stewarding zones.
• Ensure hotel equipment maintenance aligns with Food, Labour, Health, Safety, Security & Environment (FLHSS&E) standards.
• Participate in routine outlet walk-throughs and manage subsequent action plans.
• Conduct daily rigorous inspections of kitchens and stewarding departments.
• Collaborate with engineering on coordinating ice machine cleaning compliance.
• Assist the Stewarding Manager in controlling labour and chemical expenses within the department.
• Monitor and manage breakages and losses of the hotel’s operating equipment.
• Guarantee all functions and events are impeccably prepared per Banquet Event Orders.
• Effectively manage manpower allocation for stewarding staff, including outsourced teams across multiple outlets.
• Provide training for Mandarin Oriental Singapore (MOSIN) and contracted employees.
• Lead special projects delegated by the Stewarding Manager as needed.
