Job description
Overview
The Chef de Partie Pastry is responsible for ensuring efficient operation and strict control of the pastry kitchen in alignment with company policies. This role demands supervising daily production, maintaining quality and presentation, and coordinating with the Assistant Pastry Chef to manage team performance and training.
Key Duties
- Maintain the smooth workflow and operational control of the pastry galley each day.
- Provide leadership, coaching, support, supervision, and performance evaluation alongside the Assistant Pastry Chef.
- Oversee the production quality and presentation of pastries and desserts included in the daily menus.
- Forecast production needs, monitor leftover quantities to minimize waste, and control food costs within budget.
- Supervise the setup of pastry and dessert displays for buffets.
- Ensure full compliance with United States Public Health (USPH) regulations and maintain readiness for inspections.
- Ensure the pastry shop cleaning schedule is strictly followed and implement methods to reduce equipment damage.
- Manage requisition and transportation of required supplies from main stores to the pastry galley.
- Ensure that recipes and yield standards comply with company requirements.
- Assist with compiling daily pastry consumption reports as requested by the Executive Chef.
- Ensure punctual attendance and proper uniform appearance for all pastry staff, especially those in public areas, upholding hygiene standards per company policy.
- Understand and support Time and Attendance procedures and maintain familiarity with contracts and work schedules.
- Gain knowledge of ship operations to assist guests and crew effectively.
- Participate actively in meetings, trainings, courses and other work-related activities.
- Accountable for daily production recap and coaching of Pastry Cooks.
- Fulfill any additional duties assigned by supervisors or management, understanding this role’s scope may extend beyond listed duties.
Qualifications
- At least two years’ experience as a Chef de Partie Pastry in upscale environments such as hotels, resorts, cruise ships (preference for shipboard experience), or convention banqueting service.
- Formal culinary education with a culinary school degree is mandatory.
- Demonstrated strong management capability in diverse, multicultural dynamic sectors.
- Excellent communication, problem-solving, decision-making, and interpersonal skills.
- Exceptional customer service, team building, and conflict resolution abilities.
- Knowledgeable in service personalization, quality standards, alternative delivery systems, and guest satisfaction evaluation techniques.
- Proven skills in planning, coaching, organizing, staffing, controlling, and evaluating teams.
- Intermediate competence with computer software applications.
