Key Responsibilities

• Maintain high standards of food quality consistently.
• Conduct staff training on fundamental hygiene practices and HACCP protocols.
• Coordinate timely submission of hygiene samples to auditors and airline customers.
• Regularly inspect and audit suppliers to verify compliance.
• Inspect and verify incoming goods for quality and expiry to guarantee food safety.
• Oversee food production monitoring, including temperature and duration records, to ensure compliance with HACCP and SOPs.
• Ensure all storage items comply with required safety standards.
• Monitor meal preparation by checking portion weights and ensuring documentation is accurate.
• Educate staff about hygiene regulations and enforce their application.
• Collaborate with maintenance to supervise chlorination of water.
• Supervise operational practices such as temperature controls rigorously.
• Enforce FEFO inventory management and proper stock rotation procedures.
• Ensure first aid kits are fully stocked and readily accessible.
• Maintain cleanliness and standards at critical control points.
• Ensure kitchen operations strictly follow airline specifications.
