Lead Baker

Role Overview

The Lead Baker is responsible for preparing breads and pastries, including the preparation of doughs, fillings, baking, tasting, and decorating as required. Daily tasks involve reviewing the production schedule to understand the variety of baked goods to be produced.

Key Responsibilities

• Prepare and cook food items according to recipes, quality standards, presentation, and food preparation checklists.
• Maintain kitchen records to comply with food safety programs and procedures.
• Communicate with the Executive Chef regarding surplus food items to assist with daily specials planning.
• Use baking tools, equipment, and appliances correctly and safely for measuring and baking tasks.
• Ensure compliance with food handling safety policies, including personal hygiene protocols.
• Regularly verify and report the temperatures of kitchen appliances and food items to management if any issues arise.
• Monitor food quality and portion sizes throughout the working shift.
• Support management with recruitment, training, scheduling, performance evaluation, counseling, discipline, motivation, and coaching of bakery staff; act as a role model.
• Adhere to all company policies and safety procedures; report any accidents, injuries, or unsafe working conditions; complete safety trainings and certifications.
• Maintain a professional personal appearance and keep uniforms clean.
• Handle confidential company information responsibly and protect company assets.
• Communicate clearly and professionally, including telephone protocols.
• Build and sustain positive workplace relationships, support team objectives, and handle sensitive issues tactfully and respectfully.
• Serve as a departmental mentor.
• Meet quality expectations and standards consistently.
• Perform physical tasks such as lifting, moving, and positioning objects up to 25 pounds independently, as well as navigating uneven or slippery surfaces, bending, stretching, and standing for prolonged periods.
• Carry out any additional reasonable duties assigned by supervisors.

Desired Qualifications

• Education: Certification from a technical, trade, or vocational school.
• Work Experience: Minimum of 2 years in a related role.
• Supervisor Experience: Not required.
• Licenses or Certifications: None required.
