Mandarin Oriental Downtown, Dubai, situated in Wasl Tower on Sheikh Zayed Road, provides contemporary luxury hospitality with 259 guestrooms and suites offering panoramic city views. The hotel features notable dining options such as Yù & Mì, Chitarra, Noia by the Pool, and Majestas Group ventures including Billionaire, Lion in the Sun, and FB1, with upcoming openings like Osaka and Pavyllon Dubai by Yannick Alléno, plus an urban street-level eatery. Additional amenities encompass a rooftop helipad, a dual-level spa and wellness center, rooftop pools, and versatile event venues. The Residences at Mandarin Oriental Downtown are expected to launch by 2027.

Role Summary

As a Beverage Manager within the Restaurants, Bars and Experiences team, you will spearhead the strategic formulation and operational execution of beverage services hotel-wide. Reporting to the Assistant Director of RB&E, you will champion innovative beverage programs, uphold the highest standards of quality and compliance, optimize financial outcomes, and lead the beverage team to excellence.

Key Responsibilities

  • Design and implement a comprehensive beverage strategy encompassing wines, spirits, cocktails, coffee, tea, and non-alcoholic beverages that elevate guest satisfaction and commercial performance across all outlets.
  • Manage beverage menu development, seasonal campaigns, brand collaborations, and venue-specific offerings while supervising wine storage and beverage programs to maximize profitability and guest delight.
  • Set and maintain beverage operation standards, including SOPs, recipes, quality checks, and regulatory adherence via systematic audits and performance assessments.
  • Drive beverage revenue growth through cost control, waste minimization, inventory management, budgeting, forecasting, and P&L scrutiny, applying corrective measures as necessary.
  • Oversee vendor relationships, procurement activities, stock control, variance investigations, and strategic partnerships aimed at delivering value and exemplary guest experiences.
  • Lead, mentor, and train beverage staff; collaborate across departments to stimulate innovation, accountability, service quality, team competency, guest satisfaction, and KPI achievement.

Candidate Profile

  • Possess a degree or diploma in Hospitality Management, Business Administration, or related fields, with 5 to 7 years of progressive leadership in beverage management within luxury hotels or internationally acclaimed restaurant groups.
  • Demonstrate international exposure, having worked in at least two global regions, ideally including the Middle East, with a comprehensive understanding of varied beverage markets and consumer preferences.
  • Exhibit expert knowledge in beverage operations, such as costing, menu engineering, inventory oversight, supplier negotiations, and managing diverse beverage categories including wine, spirits, cocktails, and non-alcoholic selections.
  • Show strong commercial insight and financial expertise, with a solid history of boosting beverage revenues, enhancing profitability, and streamlining operations.
  • Hold advanced certification or qualifications like WSET Level 3, Certified Sommelier, or equivalents; possess profound knowledge across wine, spirits, cocktails, coffee, and non-alcoholic domains.
  • Demonstrate excellent leadership, communication, and training skills, alongside proficiency in POS systems and Microsoft Office to steer teams, nurture talent, and drive business success.
