The Assistant Chief Steward plays a crucial supporting role in stewarding operations, working closely with the Chief Steward and culinary teams to maintain cleanliness, order, and efficiency in all kitchen and back-of-house areas.

Key Responsibilities

• Assist the Chief Steward in organizing daily stewarding functions to ensure smooth and effective workflow.
• Oversee and guide stewarding staff during operations to meet cleanliness and hygiene standards.
• Ensure high levels of sanitation and upkeep for kitchens, equipment, utensils, and dishwashing stations.
• Supervise proper handling, cleaning, and use of kitchen machinery and stewarding tools.
• Allocate tasks and manage staff scheduling according to operational needs.
• Monitor availability and proper use of cleaning materials and stewarding equipment, promptly reporting shortages.
• Promote and support environmentally responsible waste segregation and disposal practices.
• Perform regular area inspections to maintain cleanliness, safety, organization, and readiness throughout shifts.
• Implement and uphold HACCP, food safety, sanitation, and occupational safety requirements.
• Assist in the training and coaching of stewarding team members to ensure consistent standards.
• Encourage teamwork, discipline, accountability, and positive culture within the team.
• Communicate clearly with team members and escalate operational issues when necessary.
• Collaborate closely with culinary and F&B departments to fulfill operational requirements efficiently.
• Help prepare for internal audits and health inspections to ensure compliance.
• Maintain high visibility during peak periods and provide direct support to the team.
• Act as Chief Steward’s deputy during their absence, ensuring continuous operations and standards adherence.

Qualifications and Experience

• Two to three years of stewarding experience in upscale hospitality environments such as 5-star hotels or luxury resorts.
• Experience in supervisory or team-leading roles within stewarding or kitchen operations is desirable.
• Good understanding of sanitation, hygiene, food safety, and HACCP protocols.
• Knowledgeable about commercial kitchen equipment and dishwashing technologies.
• Skills to supervise, motivate, and support a diverse team in a fast-paced setting.
• Strong organizational, teamwork, communication, and time management abilities.
• Basic proficiency with computers and ability to track operational records.
• Detail-oriented with a proactive stance on cleanliness, safety, and operational quality.
• Commitment to ongoing learning and upholding the hotel’s high standards.
