Overview
The Food and Beverage Controller role focuses on the strategic oversight of inventory, cost management, and quality maintenance connected to food and beverage procurement and provisioning. The position is aimed at boosting profitability and ensuring exceptional standards within the hospitality environment.
Key Responsibilities
- Plan both short-term and long-term controlling and pricing strategies for food and beverage operations.
- Supervise inventory quantities for food and beverage supplies efficiently.
- Analyze and regulate food and beverage expenditures to enhance financial gains.
- Maintain accurate and prompt reporting on inventory status and cost metrics.
- Carry out routine audits and reconciliations of inventory documentation.
- Negotiate pricing and maintain effective vendor relationships with suppliers.
- Design and apply cost control practices and protocols.
- Coordinate with kitchen and bar teams to anticipate demand and schedule purchases.
- Ensure all operations adhere to established health and safety standards.
- Generate comprehensive financial reports and conduct thorough analysis for management consideration.
- Control wastage, pilferage, and operational efficiency within Food and Beverage outlets.
- Compile and communicate variance analysis concerning food and beverage costs to relevant stakeholders.
Required Skills and Expertise
- Strong capability in financial analytics, including variance analysis and P&L reporting.
- Proficient in thorough inventory management practices such as stocktaking and warehouse audits.
- Advanced skills in Microsoft Excel, plus experience with POS software and material control systems.
- Knowledgeable in strategic pricing approaches, recipe costing, and margin adjustment linked to ingredient pricing.
Qualifications and Experience
- Degree in Hotel Management or a related discipline.
- At least 2 years of relevant professional experience in food and beverage control or similar roles.
Compensation Details
Salary falls within the range of 20,000 to 25,000 Nepalese Rupees per month.
