Overview
The Baker Tournant is responsible for overseeing the efficient operation and management of the bakery shop and daily production in alignment with company policies aboard a cruise ship. This role ensures the production, quality, and presentation of a variety of breads featured in daily menus.
Primary Duties
- Manage the smooth functioning and control of the bakery and its daily output.
- Maintain the quality, production standards, and display setup of bread assortments served in buffets.
- Support the Head Baker in forecasting production needs and tracking leftovers to control food waste and adhere to budget constraints.
- Adhere strictly to United States Public Health guidelines and maintain compliance at all times.
- Keep the bakery clean according to the Executive Chef's timetable, using proper cleaning techniques to avoid equipment damage.
- Prepare the bakery for any planned or surprise health inspections conducted by ship management or officials.
- Responsible for requisitioning and transporting supplies from main stores to the bakery when needed.
- Ensure recipes and yields meet company standards.
- Assist the Chef De Partie Baker with compiling daily consumption summaries as directed.
- Acquire necessary knowledge of ship operations to effectively assist guests and crew members with bakery-related inquiries.
- Participate in meetings, training sessions, courses, and other work-related activities as required.
- Perform any additional job-related responsibilities assigned by supervisors or management.
Qualifications and Education
- Minimum three years of experience as a baker in an upscale hotel, resort, cruise ship, or convention banqueting service; cruise ship experience is preferred.
- Proficient understanding of appropriate cleaning procedures and equipment usage.
- Completion of high school or an equivalent qualification is mandatory.
