Rixos Premium Qetaifan Island North is a luxury island destination designed for leisure, dining, and entertainment. The property features five acres of attractions, including a waterpark, a private beach, a retail zone, a beach club, and a mix of fine-dining and casual restaurants.
Role Summary
The Specialty Chef for Baklava will partner with the culinary team to plan ingredient requirements for restaurants and banquets, contribute to menu development, and handle related pastry work with a focus on authentic baklava preparation.
Key Responsibilities
- Create a range of baklava styles that deliver traditional taste while also introducing fresh ideas, ingredients, and contemporary variations.
- Refine and expand recipes using seasonal produce, new fillings, and inventive flavour combinations to strengthen the dessert offering.
- Keep taste, texture, and presentation uniform across every batch, adjusting methods where needed to maintain top-quality standards.
- Collaborate with the kitchen team to ensure operations run smoothly and provide support to fellow pastry team members whenever required.
- Help manage ingredient ordering and stock control for baklava production, making sure supplies remain sufficient and well organized.
- Present each dessert attractively, with careful handling of plating, syrup application, and decorative finishing.
Qualifications
The ideal candidate should bring pastry or baking experience with a strong focus on Middle Eastern sweets, especially baklava. A solid grasp of baklava techniques, ingredients, and flavour pairing is important, along with creativity, the ability to work under pressure in a busy kitchen, strong teamwork and communication skills, and awareness of food safety practices.
