Company Overview
SLS Dubai Hotel and Residences is a premium five-star urban lifestyle hotel within the Ennismore portfolio, part of the broader Accor group. The property comprises 946 units in total, including 254 individually designed hotel rooms, 321 hotel apartments, and 371 branded residences, all distributed across 75 floors. Located in Downtown District, it is recognised as one of the tallest hotel-and-residence developments in the region and was created by the award-winning architect and interior designer Paul Bishop.
Role Summary
The Restaurant General Manager will lead the venue’s day-to-day operations, strengthen business growth, maintain brand standards, and deliver an elevated guest experience. The role also covers team leadership, revenue generation, compliance, inventory control, and cross-department coordination.
Key Responsibilities
- Drive restaurant promotion efforts and expand the contact base for future business opportunities.
- Build and sustain professional relationships with third-party food and beverage partners.
- Ensure the restaurant concept and service style remain aligned with SLS brand expectations at all times.
- Support full compliance with local liquor, health, sanitation, and related regulatory requirements.
- Lead and direct bar and floor teams during shifts and events.
- Enforce the highest standards for uniform presentation and grooming across the team.
- Keep communication flowing clearly through verbal updates, email, memos, and other channels.
- Track department results against restaurant budgets and financial targets.
- Oversee inventory levels and help keep cost of sales within budget.
- Identify and create event opportunities that contribute to property revenue.
- Ensure every guest receives a consistently engaging and dynamic experience.
- Monitor service quality and product standards across the property.
- Work with the team on staffing plans and scheduling requirements.
- Provide ongoing coaching and training to maintain service excellence.
- Coordinate menu sponsorships and product placement arrangements.
- Serve as the main contact for Engineering and Housekeeping on matters affecting functionality and the overall presentation of the property.
- Participate in interviews and contribute to hiring decisions.
- Review employee performance throughout the year and during annual feedback cycles.
Qualifications
This position calls for someone with strong food and beverage leadership experience, excellent communication skills, and the ability to manage a busy, high-end hospitality environment.
Additional Requirements
- A high school diploma or an equivalent qualification is required; a degree in Business, Hospitality, or a related discipline is preferred.
- Applicants should have 2 to 3 years of experience in overall food and beverage operations, along with senior F&B management exposure.
- The candidate must be able to obtain and maintain any licences, certificates, or permits required by the government.
- Working knowledge of food and beverage preparation, health department standards, liquor regulations, and bar operations is necessary.
- At least 1 to 2 years of experience in a public-facing role is preferred, ideally within an upscale or lifestyle hotel brand.
- The role requires strong multitasking ability, comfort in a fast-paced setting, and a sharp eye for detail.
- Excellent spoken and written English communication is essential.
- The person must be able to build positive working relationships across teams and departments.
- Both independent work and collaborative teamwork are important for success in this role.
