As a Food & Beverage Proprietor, you will lead strategic and day-to-day operations over multiple bustling dining sites within the parks or resorts. You'll manage daily floor activities and overall performances of a varied selection of service formats ranging from rapid service and themed kiosks to fine dining, character-driven meals, and lounges; retail operations might also be included. Your role will be to synchronize smooth functioning while maintaining top-tier food quality, presentation, and Guest satisfaction, enabling your teams to bring magic to every dining experience.
This position is full-time and reports directly to the General Manager of Food & Beverage.
Key Responsibilities
- Cultivate a setting that upholds the Five Keys—safety, courtesy, show, efficiency, and inclusion—along with operational superiority.
- Motivate and train leaders committed to creating immersive dining experiences.
- Formulate strategic operational plans emphasizing innovation and ongoing enhancements.
- Drive improved financial results, Guest satisfaction, and Cast member performance through operational efficiency.
- Supervise budgeting, labor management, and contribute to annual operating, five-year, and capital planning.
- Lead a diverse group of leaders and hourly associates.
- Facilitate Cast member forums and address discussed topics.
- Work collaboratively across organizational tiers.
Required Qualifications & Skills
- Experience in managing high-revenue restaurant operations.
- Background in fine dining establishments and lounge management.
- Experience in quick-service restaurant settings.
- Familiarity with theme park or resort destination operational environments.
- At least five years of restaurant management experience.
- Knowledge of wines and spirits.
- Understanding of the annual operating plan process.
- Awareness of industry trends and practical business applications.
- Experience managing a unionized workforce.
- Ability to work independently with minimal supervision.
- Strong organizational skills and attention to detail, with effective time management and follow-through.
- Mentoring capability.
- Proven teamwork and partnership skills to advance operations.
- Financial acumen regarding budget control and labor cost management.
Preferred Qualifications
- Sommelier certification.
- At least two years leading salaried teams in table or quick service restaurants or demonstrated leadership over leaders.
- Experience exceeding two years in managing AAA four- or five-diamond rated restaurants.
- Multilingual abilities including Creole, Portuguese, Spanish, or Vietnamese.
- Demonstrated capacity to lead multi-unit restaurant operations.
- Two or more years in professional retail leadership roles.
Preferred Education
- Bachelor’s degree in Business, Hotel Restaurant Management, Retail Management, or related field, or equivalent professional experience.
