About the Role
The Pastry Chef position at a luxury 5-star hotel in Harare entails leading all pastry and bakery operations, overseeing the creation of high-quality pastries, cakes, desserts, breads, chocolates, and specialty confectionery products. This role aims to deliver exquisite culinary experiences across hotel restaurants, banquets, room service, VIP amenities, and special events while adhering to the highest hospitality standards.
Key Responsibilities
- Organize and manage daily production of diverse baked goods ensuring top-notch quality and presentation aligned with 5-star expectations.
- Develop innovative and seasonal dessert menus that reflect the hotel's culinary vision and delight guests.
- Supervise and mentor the pastry kitchen team including sous chefs, chef de partie, commis chefs, and apprentices fostering team growth and creativity.
- Ensure compliance with food safety regulations such as HACCP and maintain hygiene standards in all pastry preparation and storage areas.
- Control food costs by managing inventory, minimizing waste, conducting stock counts, and coordinating procurement activities.
- Plan and execute dessert presentations for banquets, weddings, conferences, VIP functions, and promotional events ensuring timely and aesthetic delivery.
- Address guest feedback and accommodate special dietary needs professionally while maintaining exceptional service standards.
Qualifications and Experience
- Diploma or degree in Culinary Arts, Pastry Arts, Baking, or related discipline.
- Professional certifications in pastry arts are advantageous.
- Between 5 to 8 years' experience in pastry production within high-end hotels, fine dining, or luxury resorts.
- At least 2 to 3 years in supervisory or leadership capacity managing kitchen teams.
- Expertise in banquet production and managing large-scale culinary operations is preferred.
- Advanced proficiency in pastry, baking, chocolate work, and sugar artistry.
- Strong leadership qualities paired with excellent organizational and communication skills.
- Ability to handle high-pressure environments with meticulous attention to detail and cost management knowledge.
Additional Information
The role reports directly to the Executive Chef and forms a crucial part of the culinary and food & beverage department. The Pastry Chef is expected to continuously innovate dessert offerings and collaborate closely with other culinary teams to enhance the overall guest experience.
