Role Overview

This position views the bar as a performance stage where craft, connection, and discovery come alive. Mastery of technique lays the foundation, but the soul of our cocktails is expressed through personality, theatrical flair, and a strong sense of place.

Key Responsibilities

• Prepare and serve a variety of classic, modern, and signature cocktails with exceptional quality.
• Curate seasonal cocktail menus influenced by local ingredients, culture, and Gold Coast’s character.
• Innovate by experimenting with flavors, garnishes, presentation, and techniques to create memorable drinks.
• Engage guests warmly and authentically to provide personalized experiences.
• Confidently share the background and story behind each beverage.
• Offer tailored drink recommendations aligned with guests’ preferences.
• Support special events, tastings, activations, and exclusive beverage experiences.
• Maintain extensive knowledge of spirits, wines, beers, non-alcoholic options, and current beverage trends.
• Mentor bartending peers through training sessions, tastings, and educational initiatives.
• Keep the bar organized, clean, and well-stocked at all times.
• Assist with stock management, ordering, inventory tracking, and cost control.
• Ensure consistency in cocktail recipes, presentation, and service quality.
• Comply with responsible alcohol service, food safety, hygiene, and workplace health and safety standards.
• Collaborate with Food and Beverage leadership to explore innovative concepts and business opportunities.

Candidate Profile

You are confident yet natural; curious but precise. You bring enthusiasm and care to crafting drinks that feel thoughtful, well balanced, and personal.

Qualifications and Skills

• Demonstrated professional experience as a mixologist, senior bartender, or cocktail specialist.
• Deep technical understanding of spirits, cocktail preparation, and mixology techniques.
• Creative flair for flavor combinations, visual presentation, and beverage menu creation.
• Exceptional guest service and communication abilities.
• Capable of leading tastings, training sessions, and storytelling around beverages.
• Attention to detail and commitment to consistency.
• Knowledge of inventory control, beverage costing, and operational efficiencies.
• Ability to stay composed and engaging in a fast-moving environment.
• A cooperative, dependable, and generous team-oriented mindset.
• Willingness to work evenings, weekends, and public holidays as required.
• Possess a current Responsible Service of Alcohol certificate.

Experience in luxury hotels, premium cocktail bars, high-end restaurants, or venues with heavy patronage is highly desirable.
