Role overview

BrookLodge & Macreddin Village is looking for an experienced culinary professional to join the kitchen team as a Junior Sous Chef. This position suits someone who is passionate about hospitality, confident in busy kitchen environments, and ready to contribute to a growing operation.

Key responsibilities

  • Take charge of the daily running of the kitchens and help ensure food is prepared and presented to a consistently high standard.
  • Partner with the Head Chef and the wider kitchen team to develop, plan, and deliver menus.
  • Support the onboarding, coaching, and development of new team members while helping build a positive and productive workplace.
  • Set a strong example through teamwork, professionalism, and a mindset of ongoing improvement.
  • Work effectively on your own as well as with others, showing initiative and dependable leadership.
  • Keep food safety, hygiene, and kitchen organisation at an excellent level.

Requirements

  • Substantial experience in busy, high-pressure kitchen settings.
  • Strong capability in leading teams, communicating clearly, and staying organised.
  • Real enthusiasm for cooking, creative thinking, and delivering a great guest experience.
  • Ability to remain calm and professional while working under pressure.

Other information

This is a full-time role based on 39 hours per week. Annual leave is 20 days per year. Staff meals are provided on work days. Salary is €36,650 per annum. Accommodation is available if needed.
