Role Summary
This position carries full accountability for maintaining the highest standards of sanitation and hygiene. The role ensures that food served to guests and staff remains protected from microbiological, chemical, and physical contamination, while all operational areas consistently meet required hygiene and sanitation benchmarks.
Key Duties
- Establish and monitor personal hygiene practices across the team.
- Apply and maintain critical control point procedures.
- Review and correct issues through corrective-action follow-up.
- Keep staff medical records current.
- Implement and uphold critical control points in the premises.
- Maintain engineering and food & beverage preventive maintenance lists.
- Track rectification actions and progress plans.
- Oversee delivery and storage controls.
- Maintain a system to monitor supplier operating licenses.
- Carry out shift-based daily checks for chiller temperature control.
- Supervise control of dry-store food preparation.
- Ensure cooking, storage, and serving are managed through proper control points.
- Conduct sanitation checks, including routine back-of-house rounds with the Executive Chef, Chief Steward, and Duty Engineer.
- Lead weekly kitchen walk-throughs to review minutes and unresolved issues, including dishwashing controls.
- Support food safety training for food handlers.
- Assess the effectiveness of training delivered by chemical suppliers.
- Run refresher training sessions for food handlers.
- Maintain document-control checklists for food preparation, storekeeping, cost control, stewarding, and food production.
- Prepare monthly food safety training reports and monthly laboratory test reports.
- Check CCP records and receiving records against health certificates for imported products.
- Manage food sampling and follow up on original certificates and payment-related requirements.
- Collect information and records in the event of any suspected food-borne illness.
- Ensure monthly internal audits are completed.
- Verify sickness reports for food handlers and confirm the status of their health checkups.
- Review stewarding and engineering files, including PM, calibration, and chiller-monitoring records.
- Conduct FSMS meetings, training sessions, audits, and monthly orientation briefings.
Qualifications
The ideal candidate should have experience in a high-risk environment and either a formal qualification in occupational health and safety or a closely related field, or equivalent practical experience. A solid understanding of health and safety critical control point procedures and how to apply them in the workplace is essential. The role also calls for demonstrated capability in worker engagement, contractor oversight, incident handling, training and competency, risk management, machinery safety, hazardous substances, traffic management, audit programs, and occupational hygiene. Strong relationship-building ability, influencing skills, and sound problem-solving are important, along with the ability to prioritize effectively through good time management and organization. A professional, proactive approach and excellent interpersonal skills are also expected.
