Key Responsibilities

  • Manage and assist with opening and closing procedures, ensuring all settings meet established standards prior to operation start.
  • Complete, verify, and file all outlet checklists.
  • Support management in supervising junior staff and casual workers, ensuring timely completion of assigned tasks in line with departmental protocols.
  • Handle restaurant reservations and cancellations following departmental guidelines, including daily reconfirmations via phone or email.
  • Take and document guest food and beverage orders accurately in accordance with their preferences.
  • Provide food and beverage service adhering strictly to department standards.
  • Ensure all items are served in compliance with service protocols.
  • Proactively promote food and beverage specials to increase sales and cross-sell alternative dining venues during peak times.
  • Build rapport by remembering guests' names and preferences to enhance personalized service.
  • Adhere to hotel food safety and hygiene policies, including HACCP standards.
  • Manage requisition and collection of food and beverage supplies, confirming stock matches orders.
  • Address guest complaints diplomatically and efficiently, escalating issues to management when necessary.
  • Oversee and assist with outlet operations, especially in management's absence.
  • Provide operational support to other food and beverage outlets during busy periods as needed.
  • Contribute to achieving excellent LQA (Leading Quality Assurance) standards in service delivery.

Additional Duties

  • Coordinate with department heads regarding recruitment and staffing needs.
  • Maintain comprehensive knowledge of all food and beverage offerings, preparation methods, outlet specifics, and overall hotel services.
  • Be proficient in emergency and fire safety procedures relevant to the hotel environment.
  • Participate in all scheduled meetings, briefings, and training programs assigned by management.
  • Report for duty punctually, adhering to uniform standards and maintaining a clean and professional appearance.
  • Undertake other responsibilities as assigned by hotel management.
  • Support other outlets or departments with lateral assistance when required.

Qualifications and Expertise

  • Possess a High School diploma, GED, or Diploma in Hotel Management or equivalent qualification.
  • At least 2 years of prior experience in a similar supervisory food and beverage role.
  • Strong familiarity with beverage trends, fermentation processes, cocktails, non-alcoholic options, and wines.
  • Excellent command of English in speaking, reading, and writing; bilingual abilities are advantageous.
  • Knowledgeable in applicable local legislation.
  • Proficient with Microsoft Excel, Word, and PowerPoint.
