Role Overview
The Demi Chef Pastry is responsible for preparing, baking, decorating, and presenting a comprehensive variety of pastries, breads, desserts, cakes, and confectionery in line with the hotel's standards. This role requires precision in daily mise en place to ensure seamless service across multiple outlets including restaurants, banquets, room service, afternoon tea, and special events.
Key Responsibilities
- Prepare and present pastries and baked goods maintaining consistent flavor and presentation quality.
- Support seasonal menu planning, adhering strictly to established recipes.
- Comply with all food safety regulations, HACCP procedures, and NSW Food Authority standards for proper food handling and storage.
- Manage inventory using FIFO rotation and report stock requirements to reduce waste and avoid shortages.
- Maintain high cleanliness and organization standards in the pastry kitchen, ensuring safe equipment use following WHS guidelines.
- Provide guidance and support to Commis Chefs and kitchen staff, demonstrating both independence and teamwork.
Qualifications and Experience
- Possess a Certificate III in Patisserie or equivalent and a current Food Safety Certificate.
- Have 2 to 4 years of professional pastry kitchen experience, preferably in hotels, restaurants, or specialized pastry settings.
- Demonstrated career progression to Demi Chef Pastry level with a strong portfolio of desserts, breads, pastries, and cakes meeting commercial standards.
- Excellent skills in chocolate work, confectionery, cake decoration, and refined dessert presentation.
- Competent in recipe scaling, production scheduling, inventory management, and cost control with waste minimization focus.
- Exhibit strong attention to detail, organizational skills, effective communication, problem-solving capabilities, and a creative yet standard-compliant mindset.
