The position is responsible for dish room activities, overnight cleaning, back-dock cleaning and upkeep, banquet plating support, and food running. Primary duties
- Oversee daily kitchen utility work and the staff handling those tasks.
- Make sure the team has the supplies, equipment, tools, and uniforms needed to perform well.
- Plan event support, programs, activities, and staff work assignments.
- Track incoming ordered materials and monitor current stock levels.
- Take inventory of china, glassware, and silver items.
- Control inventory for food, equipment, smallware, and liquor, and report shortages to the right people.
- Inspect supplies, equipment, and work areas to keep service efficient and aligned with standards.
- Look into employee accident reports and follow up as needed.
- Manage equipment, china, glassware, and silverware to ensure clean and adequate supplies are available.
- Ensure staff follow loss-prevention practices to reduce accidents and keep costs under control.
- Apply cleaning standards for serviceware, equipment, floors, and related areas.
- Ensure dish room machines are used and cleaned correctly.
- Confirm that food holding and transport equipment is functioning properly.
- Maintain compliance with all relevant laws, rules, food-handling standards, and sanitation requirements.
