Role Overview
The Chef de Partie at Mount Usher is responsible for preparing food, dishes, and recipes to Avoca’s standards of quality and consistency.
Key Responsibilities
- Uphold the highest levels of food hygiene, service, and presentation in line with HACCP and health and safety requirements.
- Support menu development and costing so that budgeted gross profit targets are met and waste is minimised.
- Help place food orders according to company purchasing rules, using only approved suppliers.
- Ensure assigned food safety and quality records are completed every day across the kitchen and associated areas.
- Support and guide the team to deliver top-quality food service for clients.
- Work with the Head Chef to check, inspect, and sign off all food deliveries so only premium produce is accepted.
- Make sure food is presented creatively and that temperatures are logged on the correct charts.
- Assist with stock counts when needed.
- Review the kitchen hazard register weekly with the Head Chef.
- Maintain strong communication and positive working relationships with clients, customers, and colleagues.
Requirements
- A relevant culinary qualification or equivalent hands-on experience.
- One to two years of experience in a professional kitchen.
- Practical knowledge of HACCP documentation.
- Experience supporting menu planning.
- Ability to work independently as well as within a team.
- Strong personal hygiene standards.
- Professional and courteous behaviour.
- Ability to manage several tasks at the same time.
- Clear communication skills for dealing with staff and customers at all levels.
- Ability to follow and communicate instructions accurately, both written and verbal.
