Role Overview

We are seeking a dedicated Bar Manager to lead daily operations and drive the strategic development of both the Cliveden Bar and Sanctum Headquarters. The role demands hands-on leadership to ensure outstanding service quality and operational excellence in a fast-paced environment.

Key Responsibilities

Oversee daily outlet operations with a focus on flawless service, genuine engagement, deep product knowledge, and adherence to high service standards.
Maintain a strong visible presence on the floor, setting service pace, supporting busy periods, and resolving operational challenges instantly.
Lead, coach, and motivate the team through on-the-job training, effective task delegation, monitoring performance, and clear communication.
Foster a safe, respectful, and inclusive work environment in alignment with hotel values, encouraging staff engagement, recognition, and open communication.
Manage onboarding processes and enforce standards relating to grooming, attendance, and conduct for all team members.
Ensure strict compliance with occupational health and safety, food safety, and responsible service of alcohol requirements, including incident management and reporting.
Guarantee cleanliness, well-maintained mise-en-place, and overall bar presentation through daily inspections and checklist adherence.
Supervise cash handling procedures, end-of-shift reconciliation, POS accuracy, and basic inventory controls such as voids, transfers, wastage, and minor stocktakes.
Drive revenue targets by promoting upselling, maintaining strong menu knowledge, maximizing average checks and covers, while controlling labor costs during shifts.

Candidate Qualifications

Demonstrated experience as an F&B Supervisor, Assistant Manager, or Duty Manager within a high-volume bar setting.
Proven ability to lead teams effectively during peak service times, with confident floor management and guest issue resolution skills.
Current Victorian RSA certification and valid work authorization in Australia; food safety certification is considered a strong asset.
Excellent product knowledge encompassing wines, cocktails, and contemporary dining, with the capacity to educate staff and encourage upselling.
Sound understanding of OH&S, food safety, and RSA compliance within a hotel context.
Proficiency with POS systems and basic Microsoft Office; familiarity with hotel Property Management Systems and event software is advantageous.
Willingness to work flexible hours, including rotating shifts that cover mornings, evenings, weekends, public holidays, and significant event days at the MCG.
Strong communication and interpersonal skills coupled with a calm, problem-solving approach under pressure.
