Role Overview

As a Food & Beverage Proprietor, you will provide both strategic direction and hands-on operational leadership for multiple busy dining sites within parks or resorts. You will oversee daily operations and overall performance across a diverse array of service styles including quick-service venues, themed kiosks, fine-dining, character meals, and lounges, and possibly retail. You will ensure smooth operations while maintaining premium food quality, presentation, and Guest satisfaction, inspiring your teams to deliver magical experiences at every seating.
This is a full-time position reporting to the General Manager, Food & Beverage.
Main Responsibilities
- Create a workplace culture that upholds the Five Keys principles: safety, courtesy, show, efficiency, and inclusion, driving operational excellence.
- Motivate and train leaders to engage in immersive dining experiences.
- Develop strategic operating plans focused on innovation and continual process improvements.
- Enhance financial results, Guest satisfaction, and team performance through efficient operations.
- Manage budgets and labor allocation; assist in composing annual operating, five-year, and capital financial plans.
- Lead a varied team comprising managerial and hourly staff.
- Organize forums for Cast Members, actively addressing issues and feedback.
- Work collaboratively with colleagues across all organizational levels.
Qualifications & Skills
- Prior experience managing restaurants with significant annual revenue.
- Background in fine-dining and lounge environments.
- Experience in quick-service restaurant operations.
- Familiarity with theme park or resort destination food and beverage management.
- Minimum five years in restaurant management roles.
- Comprehensive knowledge of wines and spirits.
- Understanding of the annual operating plan development process.
- Awareness of industry trends with practical application capabilities.
- Competence managing collective bargaining agreements.
- Ability to work independently with minimal supervision.
- Excellent organizational and time management skills with meticulous attention to detail.
- Effective mentoring and leadership abilities.
- Demonstrated collaboration skills with fellow team members to elevate business operations.
- Financial literacy in budgeting and managing daily labor expenses.
Preferred Qualifications
- Sommelier certification is advantageous.
- At least two years’ leadership experience directing salaried leaders in table service or quick-service settings or proven leadership capability over leaders.
- A minimum of two years' leadership in AAA four or five diamond rated restaurants.
- Multilingual proficiency in languages such as Creole, Portuguese, Spanish, or Vietnamese is desirable.
- Experience leading multi-unit operations successfully.
- Two or more years of professional retail leadership experience.
Preferred Education
A bachelor’s degree in Business, Hotel Restaurant Management, Retail Management, or a related discipline, or equivalent professional experience is preferred.
Compensation & Benefits
The salary range for this role in Florida is between $120,800 and $161,900 annually. The exact salary offer will reflect factors like geographic location, relevant expertise, and internal equity. Additional incentives such as bonuses or long-term incentive units may be included.
