Your Mission

As the Country Operations Lead, you will be responsible for ensuring seamless day-to-day operations across all company-owned and franchise stores. Your focus will be on delivering consistent guest experiences through optimized speed, product quality, and energy. You will develop operational playbooks, certify staff, perform compliance audits, and work closely with teams on the floor, not just from behind a desk. Leading the Restaurant Operations team—including Operations Managers and Trainers—you will shape future store leadership and ensure Berlin standards are maintained as the brand expands.

Key Responsibilities

• Ensure operational consistency, productivity, and guest satisfaction across all locations.
• Conduct regular in-store visits and participate in shifts during peak hours overseeing opening, closing, and busy period procedures.
• Enhance kitchen efficiency by optimizing preparation times, introducing new kitchen tools and workflows, and standardizing best practices across stores.
• Manage product quality and food safety end-to-end, maintaining HACCP compliance, recipe integrity, and overseeing corrective actions as needed. Liaise with founders on product development.
• Serve as the single point of contact for delivery platform operations.
• Lead and develop the operations team, including hiring, performance evaluations, and fostering a culture of accountability and customer focus.
• Create and maintain the Mmaah Standard Operating Playbook and implement an audit system to monitor compliance with swift resolution of findings.
• Oversee new store openings, ensuring readiness in staffing, training, supplies, and KPI tracking to meet Berlin standards within an established timeframe.
• Establish and manage a remote operations framework for stores outside Berlin, including team structures, monitoring, escalation processes, and operational guidelines.
• Maintain franchise operational standards through KPIs, coaching underperformance, and ensuring corrective measures meet agreed service level agreements.
• Collaborate cross-functionally with Expansion, Marketing, People, and Finance teams to support overall business goals.

Requirements

• A minimum of five years in operations leadership within quick service restaurants, fast casual, or system gastronomy sectors.
• Proven responsibility for at least five outlets, demonstrating success in maintaining consistency, throughput, and store-level profitability.
• Strong hands-on operational insight with the ability to quickly identify and resolve kitchen issues during service hours.
• Ownership mindset with a commitment to resolving operational challenges and leading during critical situations.
• Established experience in developing and implementing scalable playbooks, audit frameworks, and store-manager certification processes.
• Leadership experience managing multi-tiered operations teams including managers, trainers, and store leaders.
• Competency in interpreting operational financial metrics such as labor and food costs, throughput, audit results, and readiness for store openings.
• Fluency in German and English (at least C1 proficiency), used daily in communication.
• The role is based in Berlin; candidates willing to relocate are encouraged to apply.
