Position Overview
This role involves the preparation of high-quality and technically precise pastry items while adhering strictly to company policies and public health standards, aiming to deliver outstanding guest satisfaction.
Reporting Structure
- Reports directly to the Executive Chef, Executive Sous Chef, and Pastry Chef.
- Supervises Assistant Pastry Chefs.
Key Responsibilities
- Create and serve premium pastry products for all meals including breakfast, lunch, tea time, and dinner.
- Work closely with the pastry team to craft desserts, pastries, and petit fours.
- Oversee pastry operations during meal periods and represent the Pastry Chef when necessary.
- Manage buffet arrangements, service points, and showcase plates.
- Organize special orders, events, and functions.
- Plan production quantities and process requisitions according to expected guest numbers.
- Verify the accuracy of requested ingredients and materials.
- Ensure timely completion of pastry setups in line with company standards.
- Maintain correct food storage, perform quality checks, and reduce waste in accordance with health regulations.
- Promote cost-effective production practices, minimizing food wastage and breakage.
- Keep workstations orderly, clean, and well-stocked.
- Handle guest allergies and dietary requirements appropriately.
- Assist in inventory management and equipment inspections within the galley.
- Perform cleaning and maintenance of kitchen tools and areas following public health guidelines.
- Prepare for and sustain readiness for health inspections on and off the vessel.
- Follow rigorous food safety, sanitation, and hygiene protocols.
- Monitor refrigerator temperatures as required.
- Maintain and report on the condition of kitchen equipment.
- Demonstrate awareness of cost control, quality standards, and efficient operations.
- Contribute to training new team members and encourage professional growth.
- Resolve operational challenges promptly and escalate concerns to senior management.
- Participate actively in training programs for continuous skill development.
- Adhere to company standards concerning conduct, dress code, grooming, and appearance.
- Conduct preventive maintenance tasks and report major equipment problems to executive chefs.
- Comply with established Standard Operating Procedures (SOPs).
- Deliver personalized services to guests, enhancing their experience during their stay.
- Maintain professional interdepartmental relationships and support effective team management.
- Fulfill any other responsibilities delegated by management.
Qualifications and Experience
- Valid STCW95 certification required.
- At least four years in a comparable role within an internationally recognized five-star establishment.
- Sound knowledge of International cuisine and pastry techniques.
- Familiarity with public health standards and food safety regulations.
- Capable of interpreting culinary principles and recipes effectively.
- Must be physically fit and medically able to perform the role's demands.
Language Proficiency
Fluency in English, both spoken and written, is essential as it serves as the official working and safety language onboard. Candidates must competently communicate instructions and engage with colleagues and guests effectively.
Physical Requirements and Work Environment
- Frequent standing and walking over long distances.
- Repetitive movements such as bending and ascending/descending stairs.
- Ability to lift or push weights up to 50 pounds.
- Flexibility for overtime and irregular scheduling.
- Work performed in various shipboard kitchens subject to noise, foot traffic, and distractions.
