Bistro Manager

Role Overview

Talbot Hotel Clonmel, which is part of the Talbot Collection, is hiring a full-time Bistro Manager for its Clonmel, County Tipperary property. The Talbot Collection was named one of the Best Places to Work in Hospitality 2025 by Great Place to Work.

Primary Purpose

This position is focused on delivering consistently warm, high-quality service to every guest in line with the Talbot Collection’s customer service approach, “Empower Your Excellence.” The successful candidate is expected to represent the Talbot Collection professionally at all times, showing courtesy, respect, and support toward guests and colleagues.

Key Responsibilities

• Support the Operations Manager in establishing and rolling out Food and Beverage standards in line with the Hotel Manager’s expectations.
• Help ensure every arriving guest is welcomed and that their requirements are properly met.
• Make sure team members are trained to deliver the approved service standards.
• Follow all health and safety requirements and maintain compliance at all times.
• Work with HR on hiring and performance reviews, following company procedures.
• Assist with appraisals for departmental employees when needed to review performance and development needs.
• Ensure all staff are correctly dressed and presented to the highest standard.
• Take on duty management responsibilities and support other hotel areas when needed.
• Attend weekly management meetings when the Operations Manager is unavailable and communicate relevant updates back to the team.
• Maintain a consistent 4-star service standard and look for ways to exceed guest expectations.

Candidate Profile

The ideal applicant will have at least 2 years of experience in a team leadership role, strong financial awareness, a genuine drive to improve guest satisfaction, excellent organisation, and strong communication and people skills. A collaborative, team-oriented attitude is also important.
