About the Location
Set on the east coast of Mauritius, our secluded resort is a serene retreat beside a crystal-clear lagoon, ideal for water sports. Surrounded by lush greenery and breathtaking vistas, each stylish villa offers a private garden and pool, mirroring the habitat of our resident giant tortoises. After exploring the Indian Ocean or enjoying unlimited rounds of golf on two world-class courses designed by Ernie Els and Bernhard Langer, guests can relax at our award-winning spa or savor dining experiences at one of five exceptional venues, including an off-property beach bar and restaurant. The resort, opened in October 2008, includes 90 one-bedroom villas, a Presidential Suite, 45 residential villas with two to five bedrooms, two tennis courts, and a fitness center.
Role Overview
The Commis 2 position involves preparing food for hotel guests, supporting kitchen operations, and maintaining high standards of cleanliness and safety.
Key Responsibilities
- Carry out all assignments from supervisors with dedication and precision.
- Exemplify high standards, promote teamwork, and serve as a positive role model.
- Participate in all scheduled training sessions actively.
- Exude warmth, genuine enthusiasm, and care when interacting with guests and colleagues, embracing our Golden Rule philosophy.
- Adhere strictly to the hotel's code of conduct and grooming and hygiene guidelines.
- Engage in hands-on assistance during busy periods, supporting teammates effectively.
- Attend briefings and team meetings with participation.
- Keep workspaces clean, organized, and supportive of a safe working environment.
- Execute all related duties as required.
- Clean and manage the initial processing of raw food products.
- Prepare mise-en-place efficiently.
- Make bases, ingredients, stocks, and dressings according to standards.
- Assist and coach line cooks as needed.
- Maintain stringent food hygiene and storage protocols along with kitchen cleanliness.
- Complete the Safe Step Training certification successfully.
- Maintain equipment and premises in a sanitary and safe condition.
- Operate kitchen tools, machinery, and equipment safely and correctly.
- Follow the hotel's standard recipes accurately.
- Ensure timely food service adhering to guidelines.
- Work across all food preparation areas as directed.
- Accommodate food servers' requests related to guest dietary preferences.
Prerequisites and Special Requirements
- Technical education from a hospitality or culinary institution.
- Minimum one year of kitchen experience in a five-star hotel or resort setting.
- Proficiency in reading, writing, and speaking English.
- Strong technical skills relevant to professional kitchen operations.
- Demonstrated aptitude with potential for career growth.
