Role Summary

The Assistant Chief Steward ensures all food storage, preparation, and serving areas uphold the highest sanitation and hygiene standards compliant with relevant NEA legislation. The role also involves overseeing the maintenance and inventory management of all operating equipment within the Food & Beverage department. This position reports directly to the Executive Chef.

Key Duties and Responsibilities

  • Support kitchen cooking personnel by ensuring availability and good working condition of necessary kitchen equipment.
  • Manage the hotel's inventory of chinaware, glassware, silverware, flatware, and hollowware, conducting routine stock checks and maintaining cleanliness and hygiene, including regular cleaning and polishing of silverware.
  • Implement and monitor procedures to minimize breakages and losses.
  • Oversee cleaning protocols for kitchen premises to maintain high hygiene levels, liaising with local health authorities to ensure compliance with health regulations.
  • Supervise proper removal of kitchen waste.
  • Conduct daily inspections of all outlets to verify cleanliness.
  • Ensure stewarding staff adhere to SOPs in the execution of their tasks.
  • Participate in the annual business planning process, preparing stewarding budgets which include purchasing plans, inventory levels, and manpower requirements.
  • Approve stewarding staff duty rosters as prepared by the Stewarding Supervisor to support kitchen operations.
  • Provide support for external catering events and buffet setups.

Qualifications and Experience

  • At least 8 years of relevant experience in food and beverage service, particularly in banquet and kitchen operations.
  • Diploma in Food & Beverage from SHATEC or an equivalent institution.
