Job Overview
The role of Kitchen Steward is crucial to the smooth functioning and efficiency of the kitchen operations. This position primarily involves cleaning and maintaining kitchen utensils, serving ware, glassware, flatware, and cookware. Additionally, the steward manages waste removal, organization, and recycling processes to ensure a clean environment.
Key Responsibilities
- Disassemble cleaning machines correctly for thorough cleansing of all components.
- Regularly change machine water and clean debris baskets every hour.
- Ensure replenishment of cleaning chemicals during service for optimal machine performance.
- Notify supervisors promptly about low stock of cleaning supplies like solid powder, solid brilliance, and silver fusion.
- Maintain freshness of wash, rinse, and sanitizer water in the three-compartment sink by changing it at minimum every hour.
- Arrive punctually and prepared for each scheduled shift.
- Verify presence and usage of sanitizer test strips.
- Keep shelves above sinks organized and dry.
- Take out trash and recycle waste according to scheduled times or as necessary during service.
- Ensure hand sinks remain stocked with soap and hand towels throughout shifts.
- Maintain cleanliness and orderliness in all dish stations.
- Keep the soil table organized for efficient placement of dirty items.
- Clean and refresh soaking basins regularly.
- Collaborate closely with the kitchen and banquet teams during all operational hours.
- Store and arrange non-food and beverage related orders and supplies.
- Remove cardboard boxes from the receiving area and maintain the slop sink at kitchen rear.
- Manage cleanliness and organization of the glass rack storage zone.
- Complete all opening and closing duties as assigned by supervisory staff.
Qualifications and Skills
- Experience in kitchen stewarding, dishwashing, or knowledge of food service hygiene is preferred.
- Understanding of food safety standards, hygiene protocols, and cleaning methods.
- Capability to work efficiently in a dynamic and fast-moving kitchen environment.
- Physical fitness enabling standing, lifting (up to 20 lbs), bending, kneeling, pushing, and pulling as required.
- Strong focus on detail, responsibility, and ownership of tasks.
- Excellent teamwork skills with a cooperative and positive attitude.

- This position involves frequent walking and sitting during shifts.
- Occasional lifting and carrying of objects weighing up to 20 pounds is required.
- Kneeling, pushing, pulling, and lifting activities are performed periodically.
