Role Overview
The Assistant Chief Steward is responsible for helping maintain exceptional standards of cleanliness, sanitation, and order across the hotel’s food and beverage areas. The role supports the Chief Steward in leading the stewarding team, maintaining compliance with health and safety requirements, and ensuring service standards align with a luxury hotel environment.
Key Responsibilities
- Support the Chief Steward with the overall management of the stewarding department, including staffing, training, and performance oversight.
- Supervise day-to-day dishwashing, kitchen sanitation, and equipment cleaning activities while ensuring health and safety compliance.
- Track stock levels and help place orders for supplies, equipment, and cleaning chemicals as needed.
- Carry out routine checks of kitchen spaces, storage areas, and tools to confirm they remain clean, organized, and service-ready.
- Work closely with the culinary team to meet service demands and keep cleanliness standards high during meals and events.
- Help design and deliver training for new team members on cleaning methods, safety procedures, and proper equipment handling.
- Assist in budget planning and monitoring to keep costs under control without affecting quality.
- Promote a collaborative, respectful team culture with clear communication and strong cooperation.
- Respond quickly and effectively to operational issues and guest-related concerns.
- Stay current with developments and best practices in stewarding, hygiene, and sanitation.
Requirements
- High school education or an equivalent qualification is required; a degree in hospitality management or a related subject is preferred.
- At least 2 years of experience in stewarding or a similar role, ideally gained in a luxury hotel or resort.
- Proven leadership ability with experience motivating, guiding, and supporting diverse teams.
- Solid understanding of food service hygiene, kitchen safety, and regulatory standards.
- Practical knowledge of inventory control and cost management.
