Role Overview
This position is for a Commis in the pastry section. The role supports senior chefs in delivering food preparation and service to the required standards, while maintaining quality, hygiene, safety, and efficient kitchen operations.
Key Duties
- Follow the directions of the senior chef and uphold the expected standards for assigned tasks.
- Prepare, cook, and present delegated dishes with consistent quality and presentation.
- Measure ingredients correctly and ensure portion sizes are accurate.
- Use high-capacity kitchen equipment such as grills, deep-fat fryers, and griddles when required.
- Keep preparation areas, cooking equipment, and utensils clean and sanitary.
- Check that food being prepared matches the required quality and quantity.
- Replenish workstations and display areas as needed.
- Track stock usage and raise requisitions or orders in a timely manner.
- Support food cost control, reduce wastage, and help maintain kitchen targets.
- Carry out daily and weekly routines such as temperature monitoring, food labeling, dating, and storage.
- Identify hazards, make equipment or area defects safe, and escalate issues to a senior chef.
- Maintain strong personal hygiene, a clean uniform, and full HACCP compliance.
- Follow company rules for temperature checks, labeling, cleaning schedules, and hygiene records.
- Assist with receiving and storing deliveries according to company procedures.
- Understand menu planning and proper stock control, including FEFO practices.
- Perform opening and closing duties for the kitchen as assigned on a rotating basis.
- Keep assigned sections clean and support additional hygiene and housekeeping tasks requested by senior chefs.
- Stay aware of all food safety, sanitation, health, safety, and chemical-handling requirements.
- Respond appropriately to kitchen emergencies when needed.
- Comply with all company policies and operational procedures.
- Take part in training sessions, workshops, and other development activities.
Requirements
- Prior experience in pastry work.
- Basic hospitality or catering training.
- A foundation degree in Culinary Arts Management.
- Strong basic cooking ability.
- Good knife handling skills with speed, precision, and coordination.
- Practical food preparation knowledge, including sauces, salads, cold starters, hot dishes, pastry items, and roasting.
- Comfortable using standard kitchen equipment.
- Able to communicate in English.
- Capable of staying calm and productive under pressure while handling several tasks at once.
- Works efficiently and at pace.
- Able to work effectively with people from different nationalities.
- Preferred qualifications include a Diploma in Hospitality & Catering, a Diploma in Professional Cookery, or a certificate in international cuisine.
- Basic Food Hygiene and HACCP certification are advantageous.
- At least 2 years of kitchen experience in a restaurant or hotel is preferred.
- Experience across multiple kitchen stations such as vegetables, meat, fish, pastry, and butchery is desirable.
- Strong attention to detail and the ability to quickly apply what is learned.
- Resilience for long hours, split shifts, and busy service periods.
- Commitment to cleanliness and kitchen safety.
- Creative ability to present food attractively.
- Good stamina and time management skills.
