Role Summary

This position is responsible for supporting and leading daily food and beverage operations across restaurant, bar, and event service areas. The role requires strong people leadership, high service standards, and the ability to keep service running smoothly in a busy hotel environment.

Key Accountabilities

  • Manage the day-to-day flow of restaurant, bar, and event service to ensure guests receive attentive, prompt, and professional care.
  • Respond quickly to guest needs, coordinate effectively with kitchen and front office teams, and maintain consistency during peak service periods.
  • Guide, train, and support food and beverage staff so they deliver excellent standards every shift.
  • Assist with hiring and onboarding new team members, and build rosters that align operational needs with staff wellbeing.
  • Coach employees to strengthen confidence, product knowledge, and service capability while promoting an inclusive and engaged team culture.
  • Maintain compliance with food safety, hygiene, presentation, alcohol service, billing, cash handling, stock control, and health and safety requirements.
  • Lead by example in creating memorable guest interactions, including welcoming VIP and returning guests and handling feedback with empathy and professionalism.
  • Encourage upselling and sales growth through strong product knowledge and effective service techniques.
  • Support labour efficiency, waste reduction, revenue-generating initiatives, special events, promotions, and new service ideas that improve guest satisfaction and business performance.

Experience and Qualifications

The ideal candidate brings more than 5 years of supervisory experience in food and beverage, preferably in hotels or high-volume restaurant settings. The role suits someone who stays composed under pressure, including during disrupted or busy periods such as cancelled flights, and who can keep the team focused and steady.

A service style grounded in manaakitanga is important, with genuine care, hospitality, and respect for others. Strong knowledge of alcohol service, wine varieties, and food and beverage matching is valued, and an LCQ and/or Manager’s Certificate would be an advantage.
