Role overview
This position is for a Chef de Partie at Autograph Collection in Dublin, County Dublin, Ireland. The role sits within the Food and Beverage & Culinary function and is a full-time, non-management role based on site at 27 St. Stephen's Green.
What you will do
- Prepare specialty dishes and substitute menu items when required.
- Control oven, broiler, grill, and roaster temperatures to maintain cooking consistency.
- Move items from freezer storage to the refrigerator for thawing at the right time.
- Plate food neatly with the correct portions, arrangement, and garnish.
- Keep food production logs up to date and monitor both the volume and quality of prepared food.
- Coordinate with the kitchen team during peak periods and alert the chef when extra food can be used in daily specials.
- Share menu specials and unavailable items with food and beverage service staff.
- Cook and prepare food in line with recipes, quality standards, presentation standards, and preparation checklists.
- Prepare cold food items as needed.
- Support management with hiring, training, scheduling, evaluating, counseling, disciplining, and coaching team members.
- Act as a positive example for other employees and help maintain a productive team environment.
- Follow company, safety, and security rules and complete required safety training and certifications.
- Report maintenance issues, accidents, injuries, and unsafe conditions promptly.
- Maintain a professional appearance, protect confidential information, and safeguard company property.
- Respond to guest needs, communicate clearly and professionally, and work well with colleagues to achieve shared goals.
- Maintain quality standards and complete other reasonable duties assigned by supervisors.
Requirements
- A technical, trade, or vocational school qualification is preferred.
- At least 3 years of relevant work experience is preferred.
- No prior supervisory experience is required.
- No license or certification is required.
- Ability to stand, sit, or walk for long periods.
- Ability to bend, twist, pull, stoop, and reach above and below the knees.
- Ability to move, lift, carry, push, pull, and place objects weighing up to 25 pounds without assistance.
