Role Summary
This is a full-time, on-site Chef De Partie position in Doha, Qatar. The selected candidate will be responsible for running a designated section of the kitchen and ensuring that dishes are prepared, cooked, and plated in line with international standards and established recipes.
Key Duties
- Take ownership of an assigned kitchen section and keep it running smoothly throughout service.
- Prepare and organize mise en place so the section is fully ready for daily operations.
- Produce menu items according to brand recipes, portioning rules, and presentation requirements.
- Support the creation of seasonal specials that suit the café’s style and customer profile.
- Maintain high standards for food quality from receiving and preparation through cooking and final plating.
- Oversee all kitchen areas including brunch, all-day service, and pastry operations as needed.
- Recruit, train, and coach kitchen team members to strengthen performance and consistency.
- Lead daily briefings, provide feedback, and help improve individual and team output.
- Plan shifts, manage attendance, and distribute workload effectively across the kitchen team.
- Promote a disciplined, creative, and professional kitchen culture.
- Apply HACCP principles and comply with Qatar food safety regulations at all times.
- Keep hygiene, sanitation, and allergen records accurate and up to date.
- Carry out routine checks on storage areas and cold chain handling.
- Control food cost through accurate ordering, portion control, and waste reduction.
- Monitor stock movement, complete inventory counts, and contribute to monthly food cost reporting.
- Work with the General Manager on pricing decisions and margin improvement.
Candidate Profile
The ideal applicant should have strong practical cooking ability in a professional kitchen, ideally gained in cafés, patisseries, or casual fine dining settings. They should be capable of independently managing a kitchen section, including prep, cooking, plating, and timing service correctly. A solid understanding of food safety, HACCP, kitchen cleanliness, and workstation organization is important, along with experience supporting Commis Chefs and kitchen assistants. Strong attention to detail, consistency, and flavor balance is essential, as is an interest in high-quality ingredients and European-style dishes. The role also requires flexibility to work shifts, weekends, and holidays in a busy hospitality environment. A culinary diploma or equivalent formal training is preferred, and previous experience as a Chef De Partie or a capable Demi Chef ready to step up will be an advantage. Knowledge of inventory handling, portion control, and waste management is also valued, along with a willingness to adapt to brand standards and contribute ideas for menu enhancement and ongoing improvement.
