About the role

Mandarin Oriental is seeking an Assistant Chief Steward to help oversee stewarding operations in a luxury hotel environment. The position calls for someone who values teamwork, integrity, respect, responsibility, and continuous improvement. Key responsibilities

  • Take charge of cleanliness and hygiene across all kitchens and stewarding areas.
  • Ensure hotel operating equipment is maintained in line with FLHSS&E requirements.
  • Participate in scheduled outlet walkthroughs and follow up on any issues identified.
  • Carry out daily checks of kitchens and stewarding spaces.
  • Work with engineering on cleaning standards for ice machines.
  • Assist the Stewarding Manager in controlling labour and chemical costs for the department.
  • Help monitor, track, and reduce breakage and losses involving hotel operating equipment.
  • Make sure all functions and events are set up in full accordance with the Banquet Event Order.
  • Coordinate manpower allocation for stewarding staff across outlets, together with the outsourced partner.
  • Deliver training to MOSIN and contracted colleagues.
  • Handle special assignments delegated by the Stewarding Manager.
