About the Role
The Heritage, set in the peaceful Laois countryside in Killenard, is preparing to launch a new Cocktail Lounge and is seeking an experienced Senior Bartender/Mixologist to help shape the venue’s atmosphere and guest experience. The property combines luxury accommodation, an award-winning spa, and a range of leisure offerings including a health club with a pool, jacuzzi, sauna, steam rooms, a 5 km walking track, and a cinema.
This position suits someone who enjoys creating high-quality cocktails, working in a polished hospitality setting, and delivering memorable service in a lively, fast-moving environment.
Main Duties
- Use the till and payment system accurately and efficiently.
- Prepare service areas in advance, including setting tables, stocking stations, and getting tea and coffee service ready where needed.
- Support colleagues promptly and professionally, and remain flexible to help across the hotel based on operational and guest needs.
- Communicate effectively within the team and across departments by joining briefings when required.
- Demonstrate solid knowledge of wines, spirits, and menu offerings.
- Address guest concerns discreetly and escalate issues to the Head of Department or Food & Beverage Director when appropriate.
- Maintain strong awareness of The Heritage, including its services, facilities, and guest offerings.
- Arrive for duty well presented, in the correct uniform and safety footwear, with the required name badge and pin worn at all times.
- Follow and support the venue’s cleaning schedule.
- Protect and log any lost property in line with correct procedures.
- Stay informed about all hotel facilities, including operating hours, and actively promote them.
- Be familiar with the departmental SOP manual and follow the standards set by the department head.
- Attend hotel and departmental meetings as requested.
- Take part in performance chats and appraisals.
- Understand the complaints process and handle issues courteously, with escalation to the Duty Manager where needed.
- Work consistently toward strong inspection and quality results.
- Be open to operational flexibility, as adaptability is considered essential to the hotel’s ongoing success.
