Role overview
Big Mamma is hiring a Supervisor & Assistant Manager for its Dublin venue, Gloria Osteria, located at 41 Westmoreland St, Dublin. This front-of-house leadership role reports to the Front-of-House Manager and is expected to reflect the group’s values of excellence, meritocracy, entrepreneurship and authenticity on a daily basis.
Key responsibilities
You will lead service standards, support operational efficiency, and help develop the front-of-house team. The role combines guest experience, floor leadership, coaching, and administrative control.
Service quality
- Maintain a high level of service by ensuring speed, consistency and excellence in line with Big Mamma’s standards.
- Welcome guests and help create a positive first impression.
Restaurant performance
- Improve table turnover and keep service moving efficiently, including effective table resetting.
- Help the team reach average check targets through briefings, sales coaching requests where needed, performance follow-up for section leaders, and direct one-to-one support.
Front-of-house operations
- Make sure dining room hygiene rules are always followed.
- Suggest ways to reduce front-of-house labour costs.
- Manage team rota planning and scheduling.
- Handle ordering and stock control for items such as wine, tableware and aprons.
- Oversee cash management.
- Ensure equipment is used correctly and kept in good condition.
Team development
- Take part in hiring for new front-of-house team members.
- Support the induction and onboarding of new hires.
- Coach and assist the team on a daily basis.
- Help build strong team spirit and healthy working relationships.
