Role overview
This opportunity is for an experienced Head Baker to oversee the bakery function at a luxury lifestyle hotel in Doha, Qatar. The position is highly hands-on and combines artisan baking expertise with team leadership, production planning, and a strong focus on quality.
Key responsibilities
- Direct all bakery production while maintaining top standards for quality, consistency, and presentation.
- Create and improve breads, viennoiserie, and other baked items in alignment with the property’s culinary style.
- Work closely with the Executive Pastry Chef and wider culinary team on menu development and seasonal offerings.
- Train, guide, supervise, and support junior bakers and other kitchen team members.
- Oversee stock control, ingredient purchasing, and day-to-day production scheduling.
- Maintain strict compliance with food hygiene, sanitation, and HACCP requirements.
- Keep bakery equipment in proper working order and ensure efficient operations across service periods.
Candidate profile
The ideal professional will have a background as a Head Baker or Senior Baker in a luxury hotel, premium bakery, or fine dining setting. Strong practical knowledge of artisan bread, sourdough, laminated doughs, and advanced baking methods is essential. The role also calls for confident leadership, the ability to coach a team, and a consistent focus on craftsmanship and precision.
Requirements
- Prior experience as a Head Baker or Senior Baker in a luxury hotel, premium bakery, or fine dining restaurant.
- Advanced expertise in artisan bread production, sourdough, laminated doughs, and modern baking techniques.
- Strong people-management skills with the ability to train, motivate, and develop kitchen staff.
- Creative mindset for product development, with a high standard for detail and quality.
- Capability to thrive in a busy, high-volume luxury kitchen environment.
- A culinary or baking qualification is preferred.
Compensation and benefits
The total package is approximately USD $52,115 per year and is tax-free. This includes basic pay along with housing and transportation allowances.
