Assistant Manager, Standards & Specifications

Role overview

Emirates Flight Catering is looking for an experienced Assistant Manager, Standards & Specifications to support its airline catering operations in Dubai. The role focuses on ingredient planning, master data control, and compliance with defined standards to keep production running smoothly across multiple airline and catering channels.

What you will do

• Build and circulate the Estimated Monthly Consumption (EMC) for raw ingredients used across EK Economy, EK Premium, FlyDubai, Other Airlines, Central Production Kitchen, lounges, events, and festive menus, coordinating with Supply Chain, Sourcing Solutions, and Culinary teams.
• Review passenger forecasts using digital planning tools, combine them with historical trends, and use the findings to support buffer planning and Material Resource Planning for EK Economy, EK Premium, Other Airlines, FlyDubai, lounges, Central Production Kitchen, and commercial food and beverage services.
• Check the accuracy of forecasts produced through CAT360 and validate master data, while guiding and coaching the team to keep planning aligned with production needs.
• Create and update standard operating procedures for planning and forecasting, and deliver training to ensure the team follows approved processes and quality standards.
• Monitor departmental performance and ensure adherence to the quality policy and ISO 9001:2008 requirements.
• Manage the Standards & Specifications team’s master data work, including item codes and Bills of Materials for Flight Catering Solutions, and support food product standards and yield control through BOM analysis and operational changes.
• Oversee daily flight schedule and master data activities, including meal presentation, airline information, menu specifications, rotation cycles, and loading scales, while coordinating with EK In-Flight Services and other internal partners.
• Drive cost-benefit initiatives by carrying out feasibility studies, cost comparisons, and product specification reviews to improve resource use, efficiency, and business decision-making.

Education and experience

A bachelor’s degree in hospitality management, food science, or a related discipline is required. Preferred additions include certification in Supply Chain Management, Master Data Management, or Material Resource Planning, as well as ISO 9001:2008 or related quality management training. Candidates should have at least 6 years of experience in a mass food production environment and prior exposure to ERP systems in the hospitality sector.
