Role Overview
The Chief Steward is responsible for overseeing daily kitchen utility activities and the team that supports them. This includes dish room operations, overnight cleaning, cleaning and upkeep of the back dock, banquet plating, and food transportation. The role also involves supervising non-cooking kitchen staff such as dishwashers and kitchen helpers, while consistently working to improve both guest experience and employee satisfaction without exceeding the operating budget.
Key Responsibilities
- Arrange and manage the supplies needed for smooth operations, ensuring team members have the right tools, equipment, and uniforms.
- Plan schedules for events, programs, activities, and staff work assignments.
- Track incoming materials and maintain existing stock levels.
- Carry out inventories for china, glassware, and silverware.
- Monitor inventory for food, equipment, smallwares, and liquor, and escalate shortages to the appropriate contact.
- Check supplies, tools, and work areas to confirm efficient service and compliance with standards.
- Review and follow up on employee accident reports.
- Oversee the proper handling and availability of equipment, china, glass, and silver items.
- Ensure staff follow loss-prevention practices that help reduce accidents and control costs.
- Maintain cleaning standards for serviceware, equipment, floors, and related areas.
- Enforce correct cleaning and usage of dish room machinery.
- Confirm that food holding and transport equipment remains operational.
- Ensure adherence to all relevant laws, regulations, food safety, and sanitation requirements.
- Keep executives, peers, and team members informed with timely updates.
- Lead and motivate the team through strong communication, integrity, and example-setting.
- Supervise employees in day-to-day operations and be able to step into their duties when needed.
- Provide direction and a clear departmental focus to meet efficiency and effectiveness goals.

- Participate in hiring, selection, interviewing, promotions, and recruitment activities.
- Train staff on safety practices.
- Provide feedback based on observed service behavior.
- Review employee satisfaction results and address concerns or issues.
- Apply disciplinary processes in line with SOPs and LSOPs, and support peer review procedures.
- Ensure policies are enforced fairly and consistently.
- Make sure utility staff are trained in sanitation, equipment handling, and chemical use.
- Take part in progressive discipline procedures when required.
Education and Experience
Candidates should meet one of the following profiles:
- High school diploma or GED with at least 4 years of experience in procurement, food and beverage, culinary, or a related professional field.
- Or a 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or a related discipline, along with 2 years of experience in procurement, food and beverage, culinary, or a related professional area.
